At Altourky Terra we specialize in providing a wide range of cacao and related products, from fine flavor beans prized by artisan chocolate makers to high-yield varieties that support stable commercial supply. We source and prepare cacao with meticulous attention to agronomic practice, post-harvest processing, and export readiness. This includes careful fermentation, controlled drying, and traceability from soil to shipment. We work with producers growing traditional fine cacao alongside other well managed varieties that offer performance benefits in yield, resistance and processing characteristics. By combining deep local knowledge, quality control, and a global perspective, we ensure that every lot we supply meets expectations for consistency, quality and transparency in international markets.

Our cacao is cultivated using a responsible and data-informed agronomic approach. Fertilization is guided by detailed soil analysis to meet the plant’s nutritional needs, with applications made three times per year.
To protect the crop, we apply environmentally friendly fungicides and insecticides using proper safety standards. Weed control is handled through a combination of agricultural machinery and organic herbicides made from fermented cacao mucilage, maintaining a clean and healthy plantation while protecting the surrounding ecosystem.


Harvesting is done entirely by hand. Skilled workers use pruning shears and protective gear to carefully cut each pod, preserving both the quality of the fruit and the long-term health of the trees. After harvest, beans are placed in laurel wood boxes for fermentation, a five to six-day process that enhances the cacao’s natural characteristics. The beans are turned every 24 hours to ensure consistency and uniform development.
Once fermentation is complete, the beans are laid out to dry under the sun for up to four days, depending on weather. To reach the optimal moisture level for export, they are then finished in hot-air dryers, bringing humidity down to 7 percent. This careful, multi-step process results in a cacao bean that is both high in quality and ready for global distribution.
At Altourky Terra, sustainability is more than a principle—it is a daily practice. Our farm is home to a dedicated reforestation project, where native trees are planted to support biodiversity, restore natural balance, and prevent the ecological damage caused by monoculture farming.

Pesticide use is tightly controlled, in order to avoid harmful soil residues and long-term environmental impact.
